High Altitude Mint Chocolate Chip Cookies

So for those who are unaware, I’ve recently moved from VA to CO. Still looking for that elusive thing called “employment”, but until that happens I’ve got spare time for baking, I suppose. And this means getting accustomed to using the teeny “high altitude” instructions on cake and brownie mixes. Apparently the main thing is that you add more flour. I really have no idea of the scientific principles behind such things, I guess at higher pressures less moisture is required? In any case, I made cookies!

I followed this chocolate chip cookie recipe. I totally swapped out the regular chocolate chips for Andes mint chips. I have only recently discovered Andes mint chips, and they are one of the most magical things I have ever stuck in my mouth. It’s like Andes mints, hacked up into teeny tiny pieces! I had to make cookies with them before I managed to eat them all by the handful.
