As a general rule, I am not a fan of beets. It’s not that I dislike them, per se, it’s simply that, if they are on a table full of other options, they will simply not be eaten. Were they on a table full of disgusting foods, such as liver, mushrooms, or omelets, I would be all over those beets in a heartbeat. Lucky for me, I am usually not faced with such conundrums, and thus beets go uneaten by me.
So I happened to obtain some borsch recently. Borsch, for those unaware, is a Russian beet soup. It’s been quite awhile since I’d had it, and as far as I could remember, I did not care for it. And thus, it was much to my surprise to try it and find it rather good, in that “mmm…gazpacho, but not!” kind of way. Anyhow, I highly recommend trying it if you are not a fan of beets, as it will make you look at beets in a wondrous new light.
